I think for it's flexibility it's got to be a mature cheddar - tastes good 'as is', or melted.

I like a fully mature cheddar. I also love feta. Feta in salads, cheddar on crackers. Broccoli and stilton soup is a must try for all.

Informative thread GCF, nice one.

As for the best, that's a tricky one indeed. In fact I am finding it hard to think of a cheese that I don't like. I might have to take the boring option and, on the grounds of sheer versatility, plump for very mature cheddar.
